Apple Cider Vinegar Marinade

This is such a delicious, easy and moist making marinade especially good for chicken. The recipe below is good for 2 chicken breasts. Increase accordingly.

  • 1/3 cup apple cider vinegar

  • 1/3 cup avocado oil

  • 4 cloves garlic chopped

  • 1 T apple juice sweetened apricot jam

  • 2-4 T fresh chopped parsley

  • a generous pinch of smoked paprika

  • a generous pinch of cayenne

  • salt and pepper to taste

  1. Whisk all the ingredients together and pour over organic skinless boneless chicken and let marinade for at least 30 minutes and up to 4 hours.

  2. Cook on the grill or bake in a covered baking dish (keeping the lid on the whole time) at 375 for 50 minutes.

Salad Dressing Made In The Bowl

2 T olive oil

juice of one lemon

1 tsp. maple syrup

3 cloves of fresh garlic, diced

fresh chopped parsley to taste or could be cilantro or both

salt and pepper to taste

For The Salad

  • 1 asian pear, diced into chunks

  • 1 red pear, sliced

  • pomegranate seeds

  • handful of arugula

  • handful of mustard or dandelion greens (optional)

  • romaine lettuce, washed, spun and broken up into small bits

  • red leaf lettuce, washed, spun and broken up into small bits

  • pine nuts

  • avocado, cubed

Note: Use as much of the above ingredients as you like

  1. Create the salad dressing right in the bottom of the salad bowl using the list of dressing ingredients above and stir it up to blend.

  2. Mix in all the green leaves and toss to coat thoroughly with dressing.

  3. Add in the avocado and chunked asian pears and toss well.

  4. Arrange the sliced red pears around the outside of bowl.

  5. Sprinkle with pinenuts and pomegranate seeds.

The chicken comes out super moist and tender and looks nice when sliced having the green strip of parsley.
