Oatmeal Blueberry Bowl Cleanse Muffins

I'm on a roll playing in the kitchen with some new ingredients I've never worked with before. First up is Green Banana Flour. Who knew?


When I laid eyes on this bag on the shelf, before I could blink it had hopped into my cart. "Take me home and try me"...it begged.


What was a girl to do?


Ever since this bag has been shelved in my pantry, I have felt the nag to do something with it.


Day 9 on the PURE 10... LOVE YOUR LIVER CHALLENGE (click link for details about the next upcoming online group coaching challenge) ...and this is the day for taking on the challenge of making a muffin that complies with our radical fat free, liver cleansing protocol. Plant-based, gluten free, dairy free, vegan and Medical Medium compatible of course!



PRE Heat oven to 350

Ingredients


NOTE: You can sub Bob's Red Mill Gluten Free flour instead of the Banana flour but use 1 cup of that instead of 3/4 cup of banana flour.


1. First mix together:

  • 3/4 cup banana flour

  • 2 T millet

  • 1/4 tsp. salt

  • 3/4 tsp. baking powder

  • 1 tsp. cinnamon

2. Next add in:

  • cooked oatmeal (1/2 C uncooked fast cooking oats to 1 cup water)

  • 4 oz apple sauce

  • 2 T maple syrup

  • 2 pitted medjool dates cut up into little bits

  • 1 cup blueberries

3. Mix well and put into muffin pan. This amount worked perfectly for my 6 muffin pan. Bake at 375 for 25-30 minutes. Until browned on top.


If you eat them right out of the oven they are warm and oozie and soft inside.

It's like having your oatmeal breakfast bowl in a muffin!


I REALLY like the combo of the banana, millet and cinnamon. It gives it an earthy vibe.


I will be honest and say these aren't the most amazing blueberry muffins I have ever had.


HOWEVER... When you put them in the context of a 10 day love your liver cleanse, on day nine...THEY ARE DIVINE!
