Cauliflower Leek Soup

Leeks are a great prebiotic helping the good gut bacteria to thrive.


  • 1 large cauliflower, cut in chunks

  • 1 parsnip, sliced

  • 3 leeks, sliced

  • 1 daikon radish, sliced

  • 6-12 garlic cloves

  • 2 cartons of organic veggie broth or homemade broth or coconut water

  • 1 piece of kombu

  • chives

  • coconut yogurt

  • paprika, smoked paprika, cayenne, salt and black pepper -any or all of these to taste


1. Pour broth into soup pot

2. Toss in the first 7 ingredients (including kombu)

3. Start at medium high heat and turn down to a simmer for 45-60 minutes

4. Blend with a hand whizzer or in a once it has cooled

5. Reheat to bring up to desired temperature

6. Serve with snipped chives and spices of your choice

7. Top with a spoonful of coconut yogurt
