1 head cauliflowers in small bits
1 leek diced
3 zucchinis sliced
3 Yukon Gold potatoes quartered and rinsed well to get starch off
8-20 gloves garlic whole
1 carton vegetable or chicken stock
1 can full fat coconut milk
2 tsp. herbs de provence
salt and pepper to taste
1 T organic grass fed butter/ghee/coconut oil/or avocado oil
1 cup crimini mushrooms sliced
1 cup shitake mushrooms sliced
canaloni beans (1 can)
OPTIONAL: 4 Italian chicken sausages sliced up
In a large stock pot add the cauliflower, leek, zucchini, potatoes, garlic, stock, coconut milk, herbs, salt, & pepper and cook on medium and then once it gets going simmer on low until the vegetables are soft (check in about 20 minutes).
While soup is cooking saute mushrooms. Once mushrooms are limp add the sausage if you are choosing to include them.
Add mushrooms and canaloni beans (and sausage) into the soup pot and mix everything together with a ladel and serve.
Garnish with fresh chopped parsley, dill and or chives.
