Sorgham Flat Bread & Lemon Chia Hummus

Move over quinoa, sorghum is the new wonder grain that is nutritious, gluten free and environmentally friendly, high in protein and antioxidants.


Indulge me for a moment. I have a little brag about my husband. Two days ago he put an unsuspecting bag of sorghum in our grocery cart. The fact that I have a husband who would put something in our cart, I had never even thought to try, gives me pause to celebrate!!!

Sorgham Flat Bread


Preheat oven to 400


NOTE: I used regular paprika on the flat bread and smoked paprika on the hummus.













Ingredients

  • 1 1/4 cups sorghum

  • 1 1/2 coconut water

  • 1/4 tsp pepper

  • salt to taste

  • 2 pinches (or more) of red pepper flakes

  • 1 tsp. onion flakes (or more)

  • 1 tsp. Italian seasoning

Method


  1. Blend everything together on high.

  2. Line a baking sheet with parchment paper allowing it to hang over the sides.

  3. Spread the batter out as shown in video and pre score with a spatula.

  4. Sprinkle the top with more herbs of your choice (as shown in video).

  5. Bake at 400 for 25 minutes. Check at 20 minutes to make sure it isn't getting too brown.

  6. Let sit for 5 to 10 minutes.

  7. Serve with Lemon Chia Hummus



Oil Free Lemon Chia Hummus


  • 1/3 cup chia paste

  • 1 can of drained garbanzo (chickpeas)

  • 1/2 tsp. cumin
