Did you know that the carrot top greens are actually super beneficial? These valuable greens, sadly discarded are actually a great source of pro-vitamin A, vitamins C, D, E, K, B1 and B6. They are also rich with biotin , potassium, calcium, magnesium, phosphorus, organic sodium and some trace minerals. Instead of throwing them away, we are going to turn them into an immune boosting, nutrient dense pesto!
Combining the carrot tops with fresh garlic, cilantro, parsley & manuka honey makes this pesto one of the most powerful pestos ever!
bunch of carrot tops
bunch of cilantro
handful of fresh parsley
juice of 2 lemons
1/4 cup olive oil
1/3 cup walnuts
1 tsp. manuka honey
2 cloves garlic
salt to taste
Optional: cooked carrots see below
Process everything together with "S" blade.

I was making a batch of homemade dog food, hence boiled chicken with 4 chopped carrots. As I was also making the pesto at the same time, I decided to throw in a few of the soft cooked carrots and it really was a wonderful addition.
Great Served With Seed Crackers!
Nice served over rice with a salad!
